Guest Barista: Sam Spillman, 2019 US Barista Champion

FreeWe’re so thrilled to have Sam Spillman, 2019 United States Barista Champion, here at the Cafe this Thursday. Sam lives in Seattle and visits our Cafe often – she is excited to be able to share her competition signature drink with you!
Sam will be serving her drink, while supplies last, on Thursday, April 25, from 10 AM – 2 PM. Guests will order, then head to our back bar to be seated then served personally by Sam. You’ll have the opportunity to chat with her about her drink and her competition experience!
The drink consists of a natural lactic Gesha from the La Palma y El Tucan estate… grown at 1700 meters in the Cundiamarca region of Colombia. After having the opportunity to visit the farm, Sam wanted to recreate the experience through her signature drink. Other ingredients include passionfruit sipping vinegar, a lychee-infused soda water and finally, an orchid aromatic fog made with dry ice to recreate the aroma of the coffee that gets lost when the beverage is chilled. The beverage tastes like green apple, watermelon, and grapefruit, with white blossom aromatics.

Hi! My name is Sam Spillman, and I am the United States Barista Champion for 2019. My passion for coffee began about 9 years ago, working as a barista in a small cafe in Coeur d ‘ Alene, ID. Coffee is my life. I spend most of my days training new baristas, and evenings nerding out on coffee with my husband and friends. I am so excited to share a beverage that helped me earn the title of United States Barista Champion, and also encapsulates my love for service in coffee.
